Look, I’m not gonna sit here and pretend like I’ve done something revolutionary with stuffing. To be honest, my version is pretty true to the classic sausage stuffing, with the exception of a few ingredients.

I said it once already and I’m sayin’ it again … throw away that boxed stuffing!

And for the record, absolutely no shade to the boxed stuffing … it was my true love for years and years, and it’ll always be nostalgic to me. That being said, I’ve grown a bit and I’ve learned how to make stuffing just as easily, BUT. WITH. BISCUITS. 

Like, how could you pass that up?!?!?!? Here’s what you’ll need to make the best Vegan Buttermilk Biscuit Sausage Stuffing:

  • Biscuits: You can go all out and make your own vegan biscuit, but PRO TIP, the Pillsbury Grands! Southern Homestyle Buttermilk Biscuits are vegan! And they are so, so good!
  • Vegan butter
  • Vegan sausage: Any brand will do – for Holiday type recipes, I tend to reach for the Field Roast Smoked Apple & Sausage – it’s got a lot of those autumn flavors!
  • Mirepoix
  • Fresh herbs: sage, rosemary, thyme
  • Garlic
  • Broth: I use vegan chick’n broth, but veggie broth works too!

I know Thanksgiving is literally a couple days away, but I figured since this dish is so easy (AND SUUUPER DELICIOUS), then it still has a shot to make your menu!

And on a personal note, whether you’re celebrating thanksgiving with family or you’re spending it a little different due to the current situations, I hope you make the best of it. My wife and struggled for a few years on how to celebrate this holiday because frankly, we felt guilty honoring a day that felt stolen. We’ve since started learning more about decolonizing our thanksgiving table – incorporating both “traditional” and new dishes to the table, and trying to honor the original natives to this land. Vegan Buttermilk Sausage Stuffing

Ingredients
  

  • 12 vegan buttermilk biscuits such as Pillsbury Southern Homestyle Buttermilk Biscuits, prepared at least 24 hours in advance
  • 2 TBS vegan butter
  • 10 oz uncooked vegan sausage roughly chopped
  • 1 large onion finely chopped (about 1 1/2 cups)
  • 1 carrots peeled and finely chopped (about 1 cup)
  • 1 stalk celery finely chopped (about 3/4 cup)
  • 6 cloves fresh minced garlic about 3 tablespoons
  • 2 teaspoons each : fresh minced thyme fresh minced sage, fresh minced rosemary
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 2 cups vegan chick'n broth or vegetable broth
  • Fresh minced parsley for serving

Instructions
 

  • Preheat oven to 400° degrees F
  • Cut the day-old biscuits into 1-inch cubes. Set aside.
  • Melt the butter in a large oven-safe skillet over medium heat. Once the butter is melted, add the sausage, onion, carrot, celery and garlic. Season with the herbs, salt and pepper, mixing to combine. Cook until the sausage is browned and the onions are translucent, 8-10 minutes. Pour in the biscuit pieces and broth, tossing gently to coat. Place the skillet in the preheated oven and bake until the tops of the biscuits are golden and crispy, 20-35 minutes. Garnish with fresh minced parsley and enjoy!

  1. Hi, I dont know if it is different where you live but the pillsbury buttermilk biscuits in Las Vegas have butter in them. It also has the allergen warnjng saying it contains wheat and milk ingredients. Just a heads up. I’m definitely trying this today with the Annie’s flakey biscuits.

    Hi Ashley! This recipe was such a hit with my family, vegans and non-vegans. It will definitely be a staple thanksgiving recipe from now on 🙂
